How do I store cheese?

Here is an email question from rachaelray.com site visitor, Anne:

“When I purchase a chunk of cheese (Locatelli) to grate, how do I keep it as fresh as when I bought it? It seems to get

hard and not grate as freshly. I usually keep it wrapped in clear wrap and store it in refrigerator. Is this wrong?

Please tell me how to keep it as when I purchased it.

Dear Anne,

We recommend not wrapping your cheese in plastic wrap, but instead wrapping it in wax or parchment paper and then in a Tupperware type container so it stays fresh but also has a chance to breath. The Tupperware will prevent it from stinking up the whole fridge, which can be a concern if you have a stinky cheese!
