Another figure friendly winner

If you have been following my diet journal, I have been telling you about dishes of Rach’s that I am trying that fall within my low-carb world.  I have to reiterate that this world will not last for me, but I am going to do it even for a few weeks to just try to lose a few pounds and feel better.  The key is keeping the right things in the house so you aren’t grabbing for junk food because you are starving and that’s all that is around.

Tonight I made Rosemary Grilled Tuna Steaks with Eggplant and Zucchini.  This came out so well-the flavors are incredible! I used a Quebec Steak Seasoning mix and it was great.  I also squeezed some lemon juice over the tuna steaks when they came off the grill pan. I paired this dish with Cherry tomatoes and feta cheese-a recipe I got from Rach’s magazine.  I think the key to this meal is using good balsamic vinegar.  The sweetness really makes the meal come alive.
