Peaches and Herbs

Instead of the usual sweets for dessert (not that we eat dessert every night), tonight I decided to take the natural route.  I had a big bowl of apricots, small peaches, plums and nectarines in a bowl in my counter for days.  I had so many from the CSA, that even if I ate one a day for a week, there would still be some left.  So here’s what I did:

In a bowl I whisked together:

  • 1/2 cup of orange juice (I was out of lemon or I would have used that)
  • 1 teaspoon really finely minced ginger
  • a couple of fresh mint leaves, torn -a great thing for a kid to handle (go pick the herbs and rip them up!)
  • and a couple of fresh basil leaves, torn

Then I sliced the fruit and removed the pits, tossed them in the bowl with the juice mixture and a pinch of salt.  I let it chill in the fridge and when I served it, it was truly delicious-no need for anything heavy to go with it, although I could see serving these with an angel food cake or a pound cake or a scoop of vanilla ice cream.  What’s nice is that the leftovers will keep for a few days so there is a refreshing and healthy snack waiting for me in the fridge!
