Welcome Fall: Chunky Apple Muffins with Cinnamon Apple Cider Glaze

In my last post, I waxed poetic about spending my last days of summer making a luscious tomato tart. While technically, summer has come and gone as far as the calendar goes, it’s still pretty hot here in NYC. I’m loving the unseasonably warm weather but I’ve already put away my summer clothes and I ain’t going back. I need to move on so this week, I decided to embrace fall, and bake some delicious Chunky Apple Muffins.

Every year around this time, my family and I set out to go apple and pumpkin picking. It’s a highlight of the season for me because I love being outdoors and what’s better than spending some family time picking fruit and veggies and eating cider donuts? We run around the fields going from tree to tree filling our baskets to the brim with fresh, unblemished apples. Inevitably, as we set out to pay for our bounty, I get suckered into buying a jug or two of fresh apple cider. I cannot resist the smell and for some reason, I’m convinced that I need to buy some or else I will regret it for ever.

Every year I end up with lots of leftover cider because none of my family is all that into sweet drinks, even if it is just pressed apples. I can only take so much mulled cider, so I find myself looking for new and creative ways to use up all of my impulse buy before it goes bad. Last year, I came up with a deliciously simple Apple Cider Granita, perfect for when it’s still 90 degrees out in October (hello, global warming!) and this year I decided to make a gorgeous cinnamon cider glaez for my famous chunky apple muffins.

These muffins are delicious on their but I gotta say, the glaze adds a slightly sweeter/spicier element to the muffin that makes them feel like the perfect fall breakfast or light snack with a steaming cup of coffee or tea. you can easily bake this batter in a loaf shape or in a mini muffin tin to make bite sized treats to send off with the kiddos to school. No matter how you bake it, this recipe is a great way to use up your bounty of apples and cider.

Chunky Apple Muffins with Cinnamon Cider Glaze

Makes 12 muffins

For the Muffins:

1 cup brown sugar, packed

1 cup vegetable oil

3 large eggs, beaten

1 teaspoon vanilla

2 cups all-purpose flour

1 teaspoon cinnamon

1 teaspoon salt

1 teaspoon baking soda

2 cups apples, peeled and chopped small

1. Preheat oven to 350 degress and aline a muffin tin with paper muffin liners.

2. In a large bowl, combine sugar, oil, eggs and vanilla and stir until well mixed. In another bowl, whisk together flour, cinnamon, salt and soda. Stir wet ingredients into dry ingredients and gently fold apples into the batter. Pour batter into prepared muffin tins and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow muffins to cool completely before drizzling with cider glaze.

For the Cinnamon Apple Cider Glaze:

1 cup powdered sugar

1 teaspoon cinnamon

2-3 tablespoons apple cider

1. In a small bowl, whisk together powdered sugar and cinnamon and slowly pour in apple cider. Mix until smooth then drizzle over completely cooled muffins.
