Homemade Hot Chocolate
When the weather gets cold (or dips below 60) my kids start demanding hot chocolate nearly daily. I used to stock up on a semi-high quality mix (Ghirardelli) until I realized I had everything on hand to make our own. This hot chocolate blows away a Swiss Miss packet. I am not sure how the hot chocolate mix manufacturers managed to convince consumers that you need to have a mix to make hot cocoa when the real thing takes no more time than dumping the packet of mix in a mug and warming up milk (using water, even when called for, produces a completely unsatisfying cup of hot chocolate).

2 cups milk
4 tablespoons sugar
3 tablespoons unsweetened cocoa
1/2 teaspoon vanilla
pinch of salt
whipped cream (optional)
Warm milk in a medium sized pot over medium heat. Whisk in sugar, cocoa, vanilla and salt. Blend for 30 seconds using an immersion blender (optional – you can also just whisk vigorously). Put into two mugs and top with whipped cream, if desired.
