A Note from Rach: Celebrate Spring!

You’re going to think I’m crazy, but spring isn’t my favorite season, weather-wise. The first warm days: Oh, they’re nice. The first flowers to bloom: Love ’em! But when it starts to get really hot, folks, I’m out. Warm weather aside, there are certain things that I adore about May, like Mother’s Day. There’s no one in this world I look up to more than my mom, so this issue is full of ways to honor her—and all moms! Treat yours (or yourself if you have kids) to homemade brownies with super-cool mix- ins and toppings; a pretttty set of DIY kitchen towels; or an awesome last-minute trip. We arranged exclusive deals so you can get away with your family—or just you and the girls!

Another thing I love about May: Cinco de Mayo. I mean, who doesn’t appreciate a holiday that’s all about delicious Mexican food and margaritas with friends? Get into the spirit with this month’s Flavor Wheel: awesome homemade salsa (the secret ingredient: canned tomatoes!) with six super-easy ways to spin the seasonings, from tropical to extra-spicy. You’ll find tons more ideas for this “must-eat, must-drink” holiday fave of mine.

On my show, I often cook dishes I call fakeouts: meals that may look complicated but are actually foolproof. I also teach MYOTO (“Make Your Own Take-Out”) because, if you live way up in the country, like I do some of the time, there’s no such thing as ordering in! You’re going to love our “Takeout Fakeout” story because when you make your own sweet-and-sour chicken, Tex-Mex burritos, pad Thai or eggplant Parm (complete with garlic knots and Caesar salad!), you get to control the salt, the fat and the quality of ingredients. So save the delivery guy a trip and cook up something healthy!

And what a great month this is for cooking your way through 30-Minute Meals. I’d be hard-pressed to pick a favorite between Tingly Chicken & Greens Noodle Bowls and Sliced Steak Clubs with Horseradish.
