Letter from Rach: Get Fired Up!

We’ve got lots of grilling this issue—happy summer! My husband is the official griller in our family and it makes me happy that he smells like a smoky piece of beef jerky all summer long. fun. Why not plan an awesome picnic? I love the idea of picnics, but I’m not really good at being at them. Bugs love me, and I end up with so many bites, I look like a pepperoni pizza. But if you’re a picnic person, go to page 77 for a menu of foods fit to travel, like a Prosciutto & Smoked Mozzarella Muffuletta, Romaine Wedge Salad with Hearts of Palm Dressing, Chocolate Cream Slab Pie and more—plus, up your game with the coolest picnic gear on the market. A couple of years ago, because so many of my family and friends started eating in so
many different ways—vegetarian, pescatarian, gluten-free, vegan and 
so on—I decided to challenge myself to cook for them. The trick is to write a recipe that doesn’t just appeal to 
those on the eating plan, but to make the food sound so mouth-watering that no matter what you usually eat, you’ll want to take a big bite. So check out page 88 for my all-gluten-free 30-Minute Meals, a serious challenge for me to write! (If I don’t get pasta every 48 to 72 hours, you don’t want to be near me!) But I’ve gotta tell you, I love everything about these recipes: high-protein pizzas made on chicken paillards, a breadless croque madame, a noodle-less noodle salad and more. I’d eat all 10 dishes—maybe even in one day! So let’s dig in.
