Coconut Milk Fake-out

You were building “Thai it, You’ll Like it” on TV and mentioned how to make Coconut Milk. You said to use 1 1/2 c. toasted coconut and milk. How much milk and how long before it can be used in a recipe? I was trying to write it down but didn’t catch all the info. Love your show & recipes! Thanks!

Hi Marlene, I believe you are talking about the coconut milk fake out – you take a 1 to 1/2 cups of shredded coconut (baking aisle in the supermarket) lightly toast it in a dry skillet or in the oven – either way you need to keep your eye on it because it will go from light brown to burnt very quickly. Combine the toasted coconut with 3 to 4 cups of chicken stock and bring up to a bubble and simmer for 5 to 10 minutes – what ever you have time for – it’s ready when it tastes coconut –ee. Use it for savory dishes rather than coconut milk for a slightly healthier version or use it if your market doesn’t carry coconut milk. Any leftover can be frozen in re-sealable plastic bags (once it has cooled) and stored in the freezer flat (space saver) and used down the road.

    i was just thinking to add to the cocanut some spicy stuff such as cinamon or something sugery u know…cause in our familly we lovve spicy recipes!
    so do u think it will be possible to add it???

    I’m still looking for the recipe with melon balls rolled in raspberry sauce: then rolled in coconut; then frozen. My daughter saw them on 7/16/08 at the beginning of the show – I believe. she wants them at her baby shower. Please HELP!! Thanks Mary

    Your new line of dog food is a great idea. How about a line without rice? My dog (Linus)is alergic to rice and lamb, and I am having a tuff time finding him dog food. My vet found us a salmon and potato blend, but Linus does not really like it.

    Coconut that is kind of main ingredient we use in India, especially in kerala and chennia(southern part).Coconut is used in every dish.The best is we could get the canned ones (get in the asian aisle) or buy the whole coconut. With the whole coconut it tastes better, break open into pieces and peel the back (brown scale), grind it with water and squeeze out the water.That water is coconut milk, You can use it for KORMA OR Chutney,any DISH.Always use coconut in small amounts.The shredded coconut is not bad. I wish you could do some indian dishes.

    Happy belated birthday! Your gift of cooking has blessed others. I saw a 30 minute program on Wednesday, August 21st. You were making this awesome sandwich with salami, ricotta cheese, fresh basil, 1 slice of tomatoe, 1 slice of mozzarella in a kaiser roll. I can’t find the recipe. Please help

    I have been using coconut milk for awhile now (canned, Asian aisle), because of a milk allergy. My nutritionist says it’s very good for you, and the fat is the good kind, so use it! I use it in soups, puddings, and all kinds of recipes. Rice pudding with C. Milk is great!
