I think we have looked at the vegetarian/carnivore argument in too narrow a way for too long; there is definitely a middle ground that can be satisfying for your palate and for our environment.</description>

		<description>as an italian, i can say that that's a pretty original take on both polenta AND on eggplant parm. i never would have thought to pair them like that, but it works really well and looks beautiful on the plate. thank you (are you italian?).  in italy, there never has been a problem eating mostly veggies and pasta, with meat as a more occasional treat. that's the way my ancestors ate for centuries. It makes good health sense, and as long as you've got plenty of EVOO, good taste, too!</description>
