A patriotic cake - great for any party

My aunt had a family party over Labor Day weekend and I offered to bring dessert. There were eighteen of us so I had to bring enough to serve a crowd. I decided to make this flag cake which couldn’t be easier. I modified a recipe I had seen on TV with store bought cake mix ( I like it better than homemade -mine always turns out dry), canned frosting and blue berries and raspberries to make the flag. You bake it in a jelly roll pan and serve it right out of the pan. The kids decorated it and it was enjoyed by all. Don’t wait for the next patriotic holiday to make it - it’s a real crowd pleaser.

Flag Cake

1 box yellow or white cake mix (I like Duncan Hines)

2 or 3 cans white frosting

2 half pints blueberries

4 half pints raspberries

Preheat oven to 350 degrees. Grease and flour a 18 x 13 x 1 inch jelly roll pan ( i just use Baker’s Joy Spray). Prepare cake mix according to package directions and pour into prepared pan (you may have some batter left over). Bake for 15 - 20 minutes or until toothpick inserted in middle comes out clean. Let cool completely and cover entire cake in frosting. Outline a flag on the cake with a toothpick or just decorate a free-form flag like photo above. First fill in the top left quadrant with blueberries to represent the stars part of the flag and then create the stripes by alternating two rows of raspberries with two rows of piped frosting (I used a zip lock bag with the corner snipped off - I also think you could skip this if you wanted). Enjoy! I also think these would be really cute cupcakes using the blueberries and raspberries as decoration.
