This morning in the car on the way to school I asked my kids what I should write about today. Daughter #2 yelled “Cookie cake from last night!” while daughter #1 offered “Getting (Daughter #2) to eat healthy foods.” My life in a nutshell.
Daughter #2, the cookie cake girl, loves her baked goods, just like her mother. Her fave food of all time? Doughnuts. It’s not as if we have them every day (although my kids would like that) but once in a while on a Sunday we do hit Tim Horton’s. Yesterday was a doughnut day and as they were happily going through these calorie and sugar laden treats, one of my kids asked if I liked doughnuts. When I said yes, they asked then why I never ate them. As I sat at the table eating my oatmeal with bananas, I explained doughnuts weren’t really good for you, and I didn’t feel good after I ate them, but once in a while it’s ok for kids to have them as a special treat, as long as they were active and getting lots of play time.
Am I a bad mother because I let my kids have an occasional doughnut fix? Some might think so, but I don’t. I think restricting all treats from kids can sometimes backfire; for example in the case of my friend’s daughter, whose parents have on a very strict and exclusively healthy and treat-free diet. I have found the little girl, on more than one occasion, shoving candy in her pockets in secret at a party. A different situation altogether.
My kids are active and eat a variety of foods, and I love food – all food – and want them to as well – in moderation. I am especially conscious of not making a big deal about food, weight, etc. because of my two daughters – ages 10 and 8 – and I want them to have healthy attitudes toward eating, body image, etc.
Doughnut lover daughter actually loves green vegetables – especially green beans and broccoli – to the point she steals her siblings’ servings from their plates. Fruit? Not so much. I keep trying but everyone’s taste buds are different. Oranges and bananas are tolerated, but that’s about it. It’s what makes life interesting.
So back to the cookie cake – this is one of my family’s favorites and I love it because it’s quick, one bowl, and no mixer required. My kids call it cookie cake but I don’t know what these are – blonde brownies? They are very similar to toll house cookie bars, but chewier. Must be the butter and brown sugar. Yum. Everything in moderation:-).
Chocolate Chip Cookie Cake
1 stick butter
1 cup brown sugar
1 tsp vanilla
1 cup flour
1 tsp baking powder
1/2 tsp salt
1 cup chocolate chips
Preheat oven to 350 degrees. Combine flour, baking powder and salt in a small bowl. Melt butter in a medium bowl in the microwave. Quickly mix in brown sugar until dissolved. Whisk in the egg and vanilla. Add flour mixture and stir until just combined. Mix in chocolate chips. Pour into greased 8×8 pan (I line with foil and grease foil so you can lift whole thing out and cut into even squares after baked) and bake for 22 – 28 minutes or until no crumbs come out when a toothpick is inserted in middle. Do not overbake!
