I am a biopsy confirmed celiac, who must eat foods with no wheat or gluten for the rest of my life. It is a challenge to work full time, and yet make all of my own food. It is much too costly to purchase all of it, and therefore I am always seeking new recipes that are quick and easy to make, without a lot of extra ingredients. Any help you can give me would be very appreciated. The cookies look great, and I am looking forward to trying them out.
