Blueberry Muffins

Well it happened again.  While editing one of my blogger’s posts, this time it’s Christina’s post about Blueberry Crumble, I was inspired to get in the kitchen with the same ingredients. I happened to have an abundance of blueberries lately from the market and gifts from other people.  I tasted one today and it was so sweet that I knew it I didnt want to let a single one go to waste!  So I packed some loose berries in my daughter’s lunch, but then decided to make muffins for her breakfast.

I have had the luxury this week of going in to work an hour late because I have to drop my daughter off at a camp she is doing at the zoo.  So with my extra time, and for you working moms, you know an extra hour is quickly filled with catch up around the house and never means relaxation, I decided to bake.  I just made simple muffins, which I think are best consumed the morning they are baked, but can be frozen if need be.  Here is the recipe my daughter and I used, an adaptation from Joy of Cooking.

Basic Blueberry Muffins

Preheat the oven to 400 degrees F

Ingredients

  • 2 large eggs
  • 1 cup milk
  • 1/3 cup organic sugar
  • 1 teaspoon vanilla powder (our secret ingredient)
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla
  • Lemon zest from 1/2 a lemon
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon grated nutmeg
  • 1 cup fresh blueberries
  • Cinnamon sugar to sprinkle

Instructions

With a hand whisk, beat the eggs lightly, then add the milk, sugar, vanilla, vanilla powder, lemon zest, and oil until smooth.  Add the dry ingredients and stir with a spoon until just combined, don’t over mix.  Add the blueberries and just stir.

Fill a muffin tin, that has either been greased or lined with muffin liners until 3/4 of the way full.  Sprinkle the tops with cinnamon sugar and bake for about 15 minutes.  You can test to make sure they are done by pressing your finger on the center top of a muffin, if it springs back, then they are ready.  If it sinks, they need more time.

Eat right away!
