Crazy No-Bowl Cake

My kids and I made this cake over the holiday break and it was fun for the kids and surprisingly delicious – moist and chocolaty. The best thing about the recipe is that there is no bowl required – the cake is mixed and baked in the same pan. I don’t even fully grasp how it is so tasty – the cake is butter and egg-free. This is a great activity for the littlest of kids – a fun activity for a winter afternoon.

Ingredients:

1 1/2 cups flour

1 cup sugar

1/4 cup cocoa

1/2 teaspoon salt

1 teaspoon baking soda

1/3 cup vegetable oil

1 teaspoon white vinegar

1 teaspoon vanilla

1 cup cold water

1/2 cup chocolate chips

Directions:

Spray an 8-inch baking pan with non-stick cooking spray. Preheat oven to 350 degrees F. Place sifter over the prepared pan and sift together the dry ingredients (flour through baking soda).

Shake pan slightly to even out dry ingredients and using the end of a wooden spoon, poke three holes in the dry mixture.

Measure the oil in one hole, the vinegar in another, and the vanilla in another.┬áPour the water carefully over the ingredients in the pan and mix gently until all lumps are gone – remember to get the corners.

Add chocolate chips and stir briefly to combine.

Bake cake for 28-38 minutes, or until a cake tester just come out clean. Serve frosted, topped with powdered sugar, or straight up.
