Southern style......just place whole vanilla wafers in bottom of pan. Use two egg yolks only for filling and pour over wafers. Top with whipped cream. We don't bake this . The lemon juice cooks the custard. Just refrigerate overnight.

In SA we make something similar which is considered a quick version of a Lemon Meringue Pie but instead of wasting the eggs whites, we use it and make a meringue and put it on top of filling and bake it together. You allow it too cool and place it in the fridge and serve it cold... Will try the freezer and see if it makes a difference.

The pie looks and sounds d-lish. It reminds me of a something my mother inlaw use to make on a larger scale. We havent had it in years, because she has forgotten the recipe over the years ond never taught any of us how to make it .So I think I will suprise her and make this PIE TONIGHT!!!!!!
