12 Seats, 1 Chef and a Chalkboard

Rick Spiros - although of Greek decent - can cook some serious Asian food. Caterer by day and restaurant chef by night, well, half of the week that is, this man approaches Asian cuisine with finesse. Spiros has a catering company called Artisan Catering, where he turns the front half of the space to a restaurant on Wednesday-Sunday called The Bento Box. With a limited chalkboard menu and a limited amount of seating, this place is no joke. (Food) Paradise at Pebble Beach

While not dining on flavored foams and meats prepared sous-vide by some of the best chefs in the country at the Pebble Beach Food & Wine Festival, I took it upon myself to drive around what some call paradise… and drive some more… and drive some more… and drive some more. Dear San Antonio, I asked you to show me the Tex-Mex, and you did. And then some. I have to admit, I was a little nervous at first. I mean, I was down for some good ol’ Tex-Mex. Yet no two people there could point me in the same direction. I was nervous. Only time (and puffy tacos) was to tell. Chicago-Style Italian Beef-Off

If you’re not familiar with a Chicago-Style Italian Beef sandwich, you should be. Think of it as Chicago’s version of a Philly Cheesesteak, or a French Dip sandwich, but something that is our own. Simply put, it’s a large cut of beef that has been seasoned and roasted in the oven for a very long period of time. It is then chilled and thinly sliced on a slicer.
