Instead of Ice Cream, Make Semifreddo!

A semifreddo is a sweet, frozen mousse. You make it almost the exact same way that you would make ice cream, except you don’t need an ice cream maker. Semifreddo means “half-cold,” or half-frozen, in Italian. I think this is because it contains eggs and whipped cream, so it doesn’t freeze solid into a block of ice, but stays soft and pliable, like ice cream. You can flavor a semifreddo with almost anything, whether it’s chocolate, nuts, fruit, fruit juice, jam, or nut butter. Depending on what you put in it, you’ll want to whip up your cream and eggs first, and then fold in fresh fruit, chunks of chocolate, or nuts. Alternately, you may want to melt the chocolate and whisk [...]...

Rach celebrates Cooking Channel’s first year

Scripps Networks, owners of Food Network spawned a new channel last year called The Cooking Channel which currently carries Rachael’s show, Week in a Day, for one.  Yesterday, they celebrated their one year anniversary! Rachael took time out of her taping schedule to join in the festivities and give thanks to the network president, Brooke Johnson, also Rachael’s good friend. Rachael was joined by a few other Cooking Channel stars, namely Nadia G of “Bitchin’ Kitchen”, Kelsey Nixon of “Kelsey’s Essentials”, and Ben Sargent of “Hook, Line and Dinner”. Now, I must admit, I am no video camera woman, but I used this as an opportunity to try out my new video camera! The result is very blurry!  But I still [...]...

If You Think You Don’t Eat Like An American, Just Go To Israel

I am not the most adventurous of men. In fact, I don’t even like to leave the living room. And yet, here I am in Israel, of all places, trying to figure out how to eat. It’s easier than I thought; but it’s not that easy. Our eating habits don’t move with us that easily; they are part of where we live and how our parents ate, and what stores are in the neighborhood, and who delivers. I’ve always thought that geography was underrated as an aspect of our how we eat. Just because regional foodways have disappeared, and we no longer have much in the way of traditional foods or for that matter even local produce, that doesn’t [...]...

Rachael Ray in Austin Texas

Once again Rachael and her team returned to Austin, Texas to host the fourth annual Rachael Ray’s Feedback party, where music meets food and a whole lot more.  We held the event at Stubb’s Bar-B-Q as we did last year, where we continued our tradition by building a second stage in the outdoor amphitheater section of Stubb’s.  We packed a total of 15 bands into the day’s schedule including The Cringe of course, who had a special cameo appearance by Billy Gibbons from ZZ Top.  He joined for a rendition of “Dust My Broom.”  Also in the lineup were Eli “Paperboy” Reed, Fitz and The Tantrums, Free Sol, Royal Bangs, Charlie Mars, Bob Schneider, The Bravery, Tapes N Tapes, J [...]...

Wonton Soup with Gingery Scallion Broth

The cold weather is whipping it’s way through NYC and while I’d love nothing more than to be sitting on a white sandy beach about now, being 8 months pregnant, I’ll have to settle for a less expensive and closer to home bone warming option. Soup! Soup is one of my sons favorite meals. In fact, no matter where we eat, I know as long as there is soup on the menu, he’s covered. He loves the stuff and so do I. Besides being comforting, it’s a busy mamas dream meal. Soup can be made relatively quickly, packed with nutrients and most importantly in ONE POT! Can I get a “Heck Yeah!!, people? In our house, we love all kinds of [...]...

The crab didn’t know what hit him, literally!

This past weekend, I traveled down to the bottom of the New Jersey shoreline (aka “The Jersey Shore”) to my friend’s home right near the ocean.  We were almost as far as Delaware and therefore, blue crabs were all the talk. The crabs were in abundance, but also in demand, so we had to search various fish stores and eventually wait until the next boat came in with crabs, at which point we snatched up a few dozen.  Once we had the crabs, the preparations for the feeding frenzy were underway. First, my friend John very gingerly took each crab out of the bag and rather than cruelly dunking them into a pot of boiling water and letting the crab die [...]...
