From Rachael: "I was in a Park City, Utah Albertson's grocery store and picked up a sack of nuts: chipotle coated raw cashews. They were gone before I made it to the checkout line. I paid for the empty bag and immediately wrote this recipe based on the ingredients of those nuts. This may look like Chinese take-out but the maple and chipotle flavor makes for a surprise! Leave the nuts raw – they taste buttery and extra sweet. Toasting will develop a deeper flavor, but the sweet butter nuts have a unique texture when eaten raw."more
Burgoo is a thick mixed meat and vegetable stew with a tangy taste. This burger and succotash combine the flavors and ingredients to make any burger night into Derby Day. The stew is served with a stiff biscuit that is replaced here by the sammy-sized English muffin.
Serve with Julip Sweet Tea.
Serve with Smashed Potato-Cheddar Cakes with Warm Cran-Apple Sauce.
A rich and scrumptious meal!more
Rachael says, "Eat well, eat more! I cut out the bun so I can have more dogs and veggies with less guilt. Chicago-style dogs are my favorites, with pickles, tomatoes, onions, mustard and slaw on top; this salad reverses the order and piles the veggies up high underneath the dogs."more
I made this when first lady Laura Bush stopped by the show. This is a heart-healthy recipe, although I used white bread instead of wheat bread. But you can use the whole wheat white bread that is now available just as well! –RRmore
