Chocolate Chip Muffins
It's hard to believe that I (lover of all things chocolate) have never made chocolate chip muffins, but it's true. My kids recently discovered them at Tim Horton's with friends, which inspired me to make some hopefully healthier and more reasonably sized versions at home. They make a great after-school snack or even dessert – the sprinkle of cinnamon sugar on their tops make them a little bit special. Like most muffins, they freeze well. Adapted from Joyofbaking.com.

Easy Crepes
I was always intimidated by crepes. They sound fancy, and I thought you needed a special pan, special ingredients, etc. I was wrong and they actually are just as easy as pancakes. They're now one of my kids’ favorite breakfasts (or dinners if my husband is out – they seem to think it’s a secret if we have them for dinner and will ask me, “Does Dad know?”). But you need to make the batter in a blender and chill in the fridge for at least an hour or even overnight if you want to be organized on a Sunday morning.
Once you are ready to roll, the key is to have everything assembled before you start cooking them, because the pace is fast and furious. I set out sliced strawberries, powdered sugar, warm maple syrup, chocolate syrup and whipped cream (it’s a special treat, after all!), call the kids to the table and transfer the crepes to their plates as I make them. You can make them in advance, cool them, and freeze them in a resealable plastic bag separated by wax paper. However, I’ve never had the opportunity, as we never have any extras!

A parsley vinaigrette is a terrifically versatile thing. It works with all sorts of salads, from potato salads to bean salads, but it’s also great on a sautéed piece of fish or drizzled over grilled meats and vegetables. All hail, lord parsley!
This is not a juice in the true sense of the word, it’s really more of a smoothie. I prefer using a Vitamix to make green drinks rather than using a juicer because it keeps all of the nutrients and fiber of the vegetable and just processes it so that it’s easier for the body to break down, rather than extracting just the juice and discarding the fiber. When I’m having a lot of pain in my hands, which unfortunately is quite frequently, this really helps me. The folic acid in the parsley clears out the uric acid in my joints which causes the pain. – Seamus Mullen
Raspberry Jam Streusel Muffins
Always on the lookout for a new muffin, I went to my old friend Joy the Baker's blog and came across these berry streusel muffins with the right amount (read: not too much) of jam swirled in. These will be a new regular in my repertoire for sure. Joy says any kind of berries (including frozen, which I used here) and jam can be used, an added bonus!

Morning Glory Muffins
These muffins are hearty and satisfying, yet stil have only about 150 calories and 4 1/2 grams of fat in each. Plus, they freeze well. Now, I'm not going to pretend that these could even compare to a coffee cake muffin or banana streusel, but if you are looking for a healthy starter in the morning, they are a good bet.
