I have been tweaking the classic Tollhouse Cookie recipe for years to recreate my husband's favorite childhood chocolate chip cookie his grandmother used to make. He would head to her freezer (she stored them already cooked in a big zip lock in the freezer) every time he visited to grab one of these super-thin beauties. These lemon squares are classic - light, not too sweet, and delicious. I have made them many times for baby or wedding showers and served them on a platter with homemade brownies. The recipe came from my mom's old Children's Hospital cookbook which she has had for years. Perfect with a cup of tea after lunch.

Sometimes basic is best - particularly when it comes to baking. The oatmeal cookie recipe under the lid of Quaker Oats has proven to be the best oatmeal cookie recipe out there for me - especially if you skip the raisins and replace with chocolate chips. I've adapted it slightly over the years and now it has become a family favorite. You can also add chopped dried cherries which are a perfect compliment to the chocolate chips.
Bonus! This is a great way to get some fiber in your kids.
