This oven-baked pancake is super easy and very impressive when it comes out of the oven, as it is puffed up like a souffle – it quickly deflates, so admire it while you can! With a sprinkling of powdered sugar and some strawberries, this is an easy breakfast my kids love.

I am always on the lookout for a new muffin recipe - I came across this newest one that looked somewhat healthy but delicious and decided to give it a try. They are chock-full of fruit - strawberries, blueberries, and banana - but I am sure they would work well swapping in any fruit you want. You could switch raspberries for the strawberries, fold in chopped apple for the blueberries - there are tons of possibilities depending on what you have on hand. As with all recipes that call for nuts, feel free to leave them out. From a recipe by Sunny Anderson, foodnetwork.com.

This is a thick and creamy traditional New York-style cheesecake. Make the cake the day before, then chill overnight and finish off with the berries and berry topping just prior to serving. This cheesecake serves 18-20 people, sliced thinly.

Cheesecake it a perfect example of "a little goes a long way," which is why these cheesecake squares are the perfect size: one square is a one- or two-biter. Not overly sweet, there is a generous amount of lemon in this recipe, so if you're not crazy about citrus, cut the amount of lemon zest and juice in half.
Cheesecake can be tough to slice. Dip a sharp (non-serrated) knife into warm water before slicing for neater cuts. The thin slice of strawberry on the top hides any imperfections!
