Spaghetti Strudel
Mother and daughter share family favorite
When Rachael was asked what to do with leftover spaghetti, my mom (Margaret) remembered this recipe, which we used to have at family picnics.
My mom and dad have been happily married for 66 years. Mom still cooks three meals a day and never eats out. My dad is a very content man!

Ingredients
- 1 pound cooked, leftover spaghetti
- 2 cups sugar
- 6 eggs
- 1 stick butter
- 1 tablespoon cinnamon
Preparation
Pre-heat the oven to 350° F.
Take the leftover spaghetti and reheat it in the microwave or take freshly cooked, still hot, spaghetti and toss it with a stick of butter. Place the spaghetti in casserole dish.
Mix the sugar, eggs and cinnamon together and pour the mixture over the spaghetti. Cover with foil.
Bake at 350° F for 45 minutes. Let the strudel rest, then slice into squares while still warm, or at room temperature.
