Mandarin Salad
Serve with Super-sized Eggrolls.

Ingredients
- 2 tablespoons orange marmalade
- 2 teaspoons soy sauce
- 1 tablespoon rice wine vinegar or white wine vinegar
- 3 tablespoons canola oil
- 2 hearts of romaine lettuce, chopped
- 1 small can mandarin oranges, drained
Serves 4
Preparation
In a salad bowl, whisk together the orange marmalade, soy sauce and vinegar, then whisk in the oil.
Toss lettuce and oranges to coat with dressing and season with salt and pepper.
