Cobb Salad Turkey Burgers with Oven Fries
Ingredients
- 4 large Idaho potatoes, cut into wedges
- 1 tablespoon grill seasoning
- 2 tablespoons extra virgin olive oil (EVOO), plus additional for drizzling
- 1/2 cup crumbled blue cheese
- 1/4 cup sour cream
- A few dashes of hot sauce
- 1 tablespoon chives, chopped
- Salt and freshly ground black pepper
- 2 avocados, pitted and fruit removed from the skin
- Juice of 1 lime
- 2 pounds ground all-white-meat turkey breast
- 2 cloves garlic, finely chopped or grated
- 4-6 sundried tomatoes, reconstituted for a few minutes in a bowl of hot water, then chopped
- 1/4 cup chopped parsley
- 8 slices center-cut bacon or turkey bacon
- 4 sandwich-size English muffins or whole grain English muffins, toasted
- 2 hard boiled eggs, peeled and sliced
- 1 large pickle, sliced lengthwise
- 1 small red onion, thinly sliced
- 1 heart of romaine lettuce, chopped
Preparation
Pre-heat the oven to 400ºF.
