Spumoni Ice Cream Sandwiches
Serve with Cherry Tomato Red Clam Sauce with Linguine and Citrus-Thyme Vinaigrette.

Ingredients
- 12 chocolate cookies, such as Pepperidge Farm brand Brownie cookies
- 1/3 cup cherry fruit spread or jam
- 2 pints pistachio ice cream
Serves 6
Preparation
Spread the cookies with the jam. Scoop the ice cream onto six cookies, then top with the remaining six cookies and press down lightly. Wrap the sandwiches and freeze.
