"These cookies are great to make as gifts. They mail well. Fill a cookie tin with an assortment of these cookies, filled with a variety of items, walnuts, plum or apricot preserves. For seasonal additions use green, red cherries (dried fruit), or place a chocolate kiss in center for someone special.

Ingredients
  • 3 sticks butter, softened (or margarine)
  • 1 cup sugar
  • 2 egg yolks
  • 3-3/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Filling: Plum preservers, apricot preserves, walnuts, pecans, cherries or even chocolate kisses!
Preparation

Pre-heat oven to 350°F.

Cream butter and sugar. Beat in egg yolk.

Sift flour and salt, then blend into butter mixture. Add vanilla extract.

Chill dough well.

Shape into 1inch balls and place on ungreased cookie sheet.  Make indentation in center with thumb; fill with preserves, jelly, pecan or walnut half, dried fruit or chocolate kiss.

Bake in oven for 15 minutes or until lightly browned.

Cool slightly, remove to rack to finish cooling.

These keep well in tight containers.
