Swedish Butter Cookies

Ingredients
- 1 cup butter (must be butter)
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 1/4 cups flour
- Colored sugar
Serves 12
Preparation
Pre-heat oven to 375°F.
Put colored sugars into their own plates for rolling later.
Cream butter well in a large bowl. Add sugar and vanilla. Add the flour to make batter stiff, but do not overmix.
Form dough into a log. Roll log in colored sugar.
Wrap in plastic wrap or wax paper and refrigerate to stiffen.
Slice in 1/4 inch slices.
Bake just until bottom starts to become golden, about 8-10 minutes. Do not overbake.
