Quick Red Cabbage Soup

Ingredients
- 1 tablespoon vegetable oil
- 1 medium onion, halved and very thinly sliced
- 2 Gala, Macintosh or Macoun apples, peeled and diced
- 2 jars red cabbage 916 ounces each)
- 1 tablespoon pickling spice
- 1 box chicken stock
- 1 can crushed tomatoes (15 ounces)
- Coarse salt and black pepper to taste
Serves 4
Preparation
Heat deep pot over medium to medium-high heat. Add oil, onion and apples. Cover pot and cook 5 minutes, stirring occasionally. Add cabbage, picklin spice, stock, tomatoes, salt and pepper. Bring to a boil, reduce heat and simmer 10 minutes before serving.
