- 8 large baking potatoes
- 5 large sweet potatoes
- Extra virgin olive oil (EVOO), for drizzling
Pre-heat oven 400ºF.
Place the potatoes on a baking sheet and drizzle with some EVOO. Prick with fork, sprinkle with some salt and bake in oven for 40 minutes, until the potatoes are cooked through and tender.
You will need four of the baking potatoes for tonight’s dinner: Scallops Newburg-Stuffed Potatoes. Let the other potatoes cool completely and store them in the refrigerator for Night Two’s Corned Beef Hash-Stuffed Potatoes with Eggs and Night Three’s Turkey Kielbasa, Sweet Potato and Leek Soup.
