Apple Crisp
Rachael's sister Maria – the baker in the family! – has shared this recipe with us. "When you're short on time, this apple crisp is fast and good, " says Maria. "It's even better with vanilla ice cream!"
Ingredients
- 6 medium McIntosh apples
- Juice of 1 lemon
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 cup brown sugar, divided
- 1/4 cup apple cider, divided
- 3/4 cup flour
- 3 tablespoons salted butter, softened
- 1/4 cup oatmeal
Preparation
Pre-heat the oven to 400°F and place the oven rack in the center of the oven.
In a medium size baking casserole dish (or at minimum, a deep dish pie plate), peel and cut the apples into medium size chunks. Add the lemon juice, cinnamon, nutmeg, 1/4 cup brown sugar and 1/8 cup apple cider. Toss the mixture together to completely coat the apples; set aside.
In a small mixing bowl, combine the flour and butter, mashing them together with your fingers until crumbly. Add the oatmeal and toss, then add the remaining 1/4 cup brown sugar and toss; add the remaining 1/8 cup cider and rub the mixture with your fingers until it is incorporated into crumbs.
Sprinkle the crumbs over the top of the apples, pushing them down into the apples here and there. Bake for 35-40 minutes. Serve with vanilla ice cream, if desired.
