Tomato-Lime Salsa
Serve with Fried Fish Tacos Deluxe.

Ingredients
- 1 red chili pepper, such as a Fresno pepper, seeded and finely chopped
- 1 green hot chili pepper, such as a Serrano or jalapeño pepper, seeded and finely chopped
- 1 medium red onion, finely chopped
- 3-4 ripe tomatoes, seeded and chopped (2 cups)
- 2 limes
- Salt, to taste
- A generous handful of cilantro, finely chopped (about 1/4 cup)
- A small handful of mint, very finely chopped (a couple of tablespoons)
Serves 2 1/2 cups
Preparation
In a bowl, combine the ingredients, using the zest of one lime and the juice of both limes; adjust the salt, to taste.
