- 1 cucumber, peeled and seeded
- 1 small tomato, seeded and coarsely chopped
- 1/2 bell pepper, seeded and coarsely chopped
- 2 tablespoons fresh parsley, coarsely chopped
- Salt and pepper (for people portions)
Makes 2 1/2 - 3 cups
Using a blender or food processor, pulse all of the ingredients. Thin with 1/2 cup-1 cup water as desired. For people portions, season with salt and pepper.
