Apple Crisp

Fresh apples call for Apple Crisp! Plan B Mom has shared her favorite recipe, with a good amount of lemon flavor to offset the sweetness.

Ingredients

For the filling:

  • 4 pounds firm apples (about 10 apples), such as Ida Red, Granny Smith or Empire varieties
  • Zest and juice of 1 lemon
  • 1/2 cup sugar
  • 1/4 cup flour
  • 1 1/2 teaspoons cinnamon

For the topping:

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 3/4 cup brown sugar
  • 1/2 teaspoon kosher salt
  • 1 cup oats
  • 2 sticks cold butter, diced
Serves 8-10

Preparation

Pre-heat the oven to 350°F.

Peel and core the apples and cut them into large uniform chunks. Place the apples in a large bowl and toss with the lemon zest, lemon juice, sugar, flour and cinnamon. Transfer to either ten 1-cup ramekins or a 9-inch x 13-inch baking dish.

To make the topping, combine the flour, sugars, salt, oats and cold butter in an electric mixer with a paddle attachment. Mix on low speed for 2 minutes, until the mixture is well combined and crumbly.

Spread the topping evenly over the fruit mixture and pat down slightly.

Place the baking dish(es) on a cookie sheet and bake for 50-60 minutes, until the top(s) is browned and the fruit is bubbly. (You can also refrigerate, covered, and bake later for 60-75 minutes.)

Serve warm with vanilla ice cream.
