Crispy Cereal Bars
Plan B Mom's friend Missy passed along her family recipe for these cereal bars – a family favorite from the 60’s. They are similar to Rice Krispies treats but chewier and with more flavor. Missy says, "They ship well – my mom has been making them for years and gives them as gifts. In college, I would be swarmed with new friends when a shoebox of these would arrive. They are extremely sweet, so cut them into small bars!"
Ingredients
- 1 cup sugar
- 1 cup light corn syrup, such as Karo brand
- 1 cup peanut butter
- 6 cups crispy rice cereal, such as Special K
- 1 1/2 cups chocolate chips
- 1 1/2 cups butterscotch chips
Preparation
Place the cereal in a large mixing bowl. In a medium size saucepan, bring the sugar and corn syrup to a rolling boil, continually stirring. Take the pan off the heat and add in the peanut butter and stir until creamy. Pour the mixture over the cereal and mix well. Pour into buttered 9-inch x 13-inch pan and flatten with your fingertips (wet your finger tips so that they don’t stick). Allow to cool a bit.
Mix the chocolate chips and butterscotch chips and melt together and stir until creamy. Pour over the cereal base and smooth with a rubber spatula. Let sit for 1-2 hours, then cut into squares. Do not refrigerate.
