Ingredients
  • 2 14-ounce cans salmon with bones, drained
  • 2 egg whites, beaten
  • 1/3 cup Italian bread crumbs (a couple of handfuls)
  • 1 tablespoon Old Bay seasoning
  • A few drops of hot sauce, such as Tabasco
  • 2 tablespoons flat-leaf parsley, chopped
  • 3-4 tablespoons roasted red pepper from a jar, drained and chopped
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon vegetable oil (once around the pan)

 

Preparation

Preheat oven to 375°F

Heat a medium-sized ovenproof skillet over medium-high heat (if you don’t have an ovenproof skillet, wrap the handle tightly in aluminum foil). Combine salmon, egg whites, bread crumbs, Old Bay, Tabasco, parsley, roasted red pepper, salt and pepper. Form mixture into 4 patties, 1 inch thick. Pour vegetable oil into hot pan. Add patties and cook 1-2 minutes on each side, then transfer to oven and bake for about 8 minutes
