- 1 stick butter, softened
- 2 cloves garlic, grated
- 1/4 cup chopped fresh herbs, such as thyme, rosemary, parsley and chives
- 1 tablespoon lemon juice
- Salt and pepper
- 1 boneless, skin-on turkey breast (about 5 pounds)
Pre-heat the oven to 350ºF.
Put the butter, garlic, herbs, lemon, salt and pepper in a food processer and pulse until mixed well. Slather the turkey breast with the compound butter, making sure to get plenty under the skin. This can be done in advance, 12 hours or overnight, or 15 minutes before roasting.
Roast for 45-50 minutes. Remove when the internal temperature reaches 155ºF. Let rest for 15-20 minutes, then slice and serve.
