Giant M&M Cookies
My son requested "giant M&M cookies" (note: I had never made these) as his birthday treat to bring to school this year. I made these huge sugar cookies studded with not-too-many M&Ms and they were a hit. They are huge and just as good as the giant bakery cookies kids (and adults) go crazy for.
Ingredients
- 4 cups flour
- 2 1/2 teaspoons baking soda
- 1 1/2 teaspoons kosher salt
- 1 1/2 cups butter, softened
- 1 1/3 cups sugar
- 1 1/3 cups brown sugar
- 2 eggs
- 2 egg yolks
- 3 teaspoons vanilla
- 2 cups M&Ms
Preparation
Pre-heat the oven to 350°F.
Line two baking sheets with parchment paper. In a large bowl, whisk together the flour, baking soda and salt. Beat the butter and sugars with an electric mixer until light and fluffy (about 2-3 minutes). Scrape down the bowl and add the eggs and egg yolk, one at a time, and beat until well combined. Beat in the vanilla.
Gradually add the flour mixture to the butter mixture and beat until just incorporated. Form the dough into balls, using a scant 1/4 cup measurement for each. Place six balls of dough on each cookie sheet and slightly flatten each cookie. Completely cover the top of each cookie with M&Ms, gently pressing the candies into the dough.
Bake the cookies for 15-17 minutes, rotating the cookie sheets halfway through. The cookies should be just set – they will look slightly underdone. Let the cookies cool on the sheets for 4-5 minutes before removing to a cooling rack.
