Avocado Bean Dip
This quick and easy bean dip is great for backyard parties. Serve with chips or in taco shells with lettuce and grilled chicken.

Ingredients
- 5 plum tomatoes chopped
- 2 avocados chopped
- Half of 1 red onion chopped
- 2 cans shoepeg corn drained
- 2 cans black beans drained and rinsed
- Half packet of dry ranch dressing mix
- 2 tablespoons EVOO
- 2 tablespoons white balsamic vinegar
- Salt/pepper to taste
- Fresh lime juice
Preparation
Combine all ingredients. Serve with any type of corn chip. Chill in the fridge and let marinate before serving. Enjoy!
