Pork Chops and Applesauce
The orange-soy glaze on these pork chops is delish! Easy homemade applesauce and green beans with oven-roasted potatoes complete this meal that is sure to be a crowd pleaser!
Ingredients

1 1/2 pounds baby red-skinned potatoes, cut in half

1 pound green beans, trimmed and cut into 1-inch pieces
- 6 tablespoons extra virgin olive oil (EVOO), divided

Salt and freshly ground black pepper

1/4 cup parsley leaves (about a handful), chopped

4 McIntosh apples, peeled, cored and diced
-
1 cup all-natural apple juice or cider (it should look cloudy)

3 tablespoons light or dark brown sugar

Zest of 1 orange, reserving the juice

1/4 cup soy sauce or Tamari (dark soy sauce)

4 1-inch thick center-cut boneless pork loin chops (6-8 ounces each)
Preparation
Pre-heat the oven to 400°F.
