Roast Broccolini and Beans
Broccolini is a green vegetable resembling broccoli that is a hybrid between broccoli and Chinese kale. This mix of Broccolini and string beans has a slightly sweeter flavor than regular broccoli and is an easy yet elegant side that goes well with a variety of main dishes.
You may wish to serve this with Herb Apricot Chicken, Butternut Squash Risotto and Nutella Tarte.

Ingredients
- 2 bunches Broccolini, trimmed
- 1 pound string beans, trimmed
- 4 cloves garlic, crushed
- 3 tablespoons extra virgin olive oil (EVOO)
- Salt and pepper
Serves 6
Preparation
Pre-heat the oven to 425°F. On a baking sheet, toss the vegetables and garlic with the EVOO; season with salt and pepper. Roast until crisp at the edges, 15-18 minutes.
