Chocolate Mint Parfaits
This festive-looking dessert is perfect for celebrating special occasions. If you have room, it's an elegant finale for Well-Deserved, Well-Dressed Individual Beef Wellingtons with Steamed Broccoli Spears.

Ingredients
- 4 shots crème de menthe liqueur
- 1 container mint chocolate ice cream
- 4 chocolate mint candies, such as Andes brand or York Peppermint Patties
- 4 sprigs fresh mint
Serves 4
Preparation
Using four parfait glasses or cocktail glasses, pour half a shot of crème de menthe into each glass. Top with scoops of mint chocolate ice cream, then drizzle another half a shot of crème de menthe per parfait glass over the ice cream.
Garnish parfaits with mint candy and fresh mint sprigs.
