Banana Oatmeal Squares
This recipe is a favorite in our house. Not only is it portable, but it’s packed with good-for-you ingredients. And and best of all? No sugar! It’s a great breakfast or snack for the whole family and perfect for those days when everyone is crazed because it can be eaten on-the-go.
- 1 1/2 cups oatmeal (instant or rolled oats both work well)
- 1/2 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 large ripe banana, mashed
- 2 tablespoons unsalted butter, melted
- 1 egg, beaten
- 1 cup milk
Pre-heat the oven to 350ºF. Grease an 8-inch x 8-inch cake pan.
Dump all of the ingredients into a large bowl and stir until well combined. Pour the mixture into a prepared cake pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool for 5-10 minutes before cutting into squares. The squares can be stored, covered, in the refrigerator for up to 5 days. Makes 6-8 squares.
