BOTJ Raspberry Rhubarb Fizz

- Raspberry jam or preserves from the bottom of a jar (about 1/2 ounce)
- 2 fresh mint leaves
- 2 pieces rhubarb
- 1/2 ounce lemon juice
- 1 ounce gin
- Rhubarb stalks, for garnish
Muddle jam, min and rhubarb in a shaker then add lemon juice and gin. Shake it up, pour into glasses and top with seltzer. Garnish with a stalk of rhubarb.
