Chopped Veggie Salad
Serve alongside Grilled Cheese Burgers.
- 2 tablespoons sweet relish
- 2 tablespoons red wine vinegar
- 2 tablespoons extra virgin olive oil (EVOO)
- Salt and freshly ground black pepper
- 1 head romaine lettuce, chopped
- 1 English (seedless) cucumber, thinly sliced
- 1 red onion, thinly sliced
In the bottom of a large mixing bowl, whisk together the relish, vinegar and EVOO with some salt and pepper. Add the lettuce and veggies to the bowl and toss to coat. Serve immediately.
