These mini sorbet “sammies” can be put together in a jiffy – and they’ll be eaten up just as fast!
- 1 pint orange sorbet
- 48 vanilla wafer cookies
Line a mini-muffin tin with plastic wrap.
Place a cookie flat side up in each of the muffin cups. Fill with a scoop of orange sorbet, about a tablespoon, then place another cookie on top. Transfer to the freezer to firm up.
