“This cookie recipe was given to me by my mom, from her mom and from her mom. I am not allowed at any family function unless I bring them.”
- 1 stick unsalted butter
- 2 cups sugar
- 4 tablespoons cocoa powder
- 1/2 cup milk
- 1 teaspoon vanilla
- 3 cups quick oats
- 4 ounces shredded, sweetened coconut flakes
In a saucepan over medium heat, stir together the butter, sugar cocoa and milk.Bring to a full boil for two minutes, stirring constantly. Add vanilla and remove from heat.
In a large bowl, mix together the oatmeal and coconut.
Pour the cooked mixture into the bowl and stir to cover all the oatmeal and coconut.
Spoon mixture onto wax or parchment paper, spread out to 1/4-1/2 inch thick and let it cool and set.
Cut into squares and enjoy!
