Red Beans and Greens Salad

Serve with Cowboy Spaghetti.

Ingredients

  • 1 cup chunky prepared salsa, such as chipotle salsa
  • 2 tablespoons extra virgin olive oil (EVOO), (eyeball it)
  • 1 head escarole, chopped into small bite size pieces
  • 1 can red kidney beans (14 ounces), drained
  • 1/2 red onion, chopped
  • Salt and pepper

Preparation

Combine salad ingredients in a bowl, toss and adjust seasoning.
