This recipe was sent to rachaelray.com visitor, Carol Blawat who gives us her recipe for her:
“Soft cut-out sugar cookie, with frosting.”
- 2 cups butter
- 3 cups powdered sugar
- 1 tablespoon milk
- 2 eggs
- 1 tablespoon vanilla or almond extract
- 5 cups self-rising flour
- 1/4 cup butter
- 2 cups powdered sugar
- 1/2 teaspoon vanilla
- 1/4 cup milk
Pre-heat the oven to 350°F.
Beat butter and powdered sugar together until fluffy.
Add milk, eggs and vanilla and thoroughly combine.
Add self rising flour and stir until just combined.
Chill dough for 30 minutes, covered in mixing bowl.
Roll out dough on a lightly floured surface to 1/4 inch thick and use the cookie cutter of your choice.
Place cookies on a foil-lined cookie sheet and bake in a pre-heated oven for 7 minutes or until very slightly browned on the bottom.
While cookies are cooling, combine frosting ingredients, mix well and frost cooled cookies.
Note from Carol: Other ideas: tint frosting and use sprinkles or colored sugar to decorate according to the occasion or holiday.
