RECIPE

A Rachael Goes to Monte Cristo

Make use of day-old bread with French toast Rachaels accented with homemade Russian dressing. It’s a cheap and cheerful meal anytime of the day!

Ingredients

  • 8 slices day-old good-quality white bread (buy it in the fresh bakery section of a large market or local bakery and have them slice it for you)
  • 1/2 cup sour cream
  • 1/2 cup ketchup
  • 1/4 cup relish
  • 3/4 pound oven-roasted turkey
  • 2/3 pound thinly sliced Gruyère cheese or Swiss cheese (such as Emmentaler)
  • 1/2 cup sauerkraut
  • 3 eggs, beaten
  • 2 tablespoons butter

Preparation

Line up eight slices of bread on a work surface. Place a griddle or large skillet over medium heat.

In a small mixing bowl, combine the sour cream, ketchup and relish. Set aside.

Build four sandwiches with two to three slices of turkey, two slices of cheese, a few tablespoons of sauerkraut and some sauce per sandwich. Cap off each sandwich with the remaining bread slices and dip them all in the beaten egg (just like French toast). Add butter to the griddle and cook the sandwiches for 4 minutes on each side, turning with thin spatula.
