Airplane Snacks: Southwest Corn Muffins

Pop these babies into the oven and into a travel bag for a well-balanced snack. Try all of Rach’s airplane snacks!

Ingredients

  • 1 box corn muffin mix, such as Jiffy brand
  • 1 egg
  • 1/3 cup milk
  • 1/3 cup deli turkey, chopped
  • 1/3 cup red bell pepper, chopped
  • 1/3 cup sharp cheddar cheese shredded

Preparation

Pre-heat the oven to 400ºF.

In a large bowl, mix together the corn muffin mix, eggs and milk until combined. Fold in the turkey, peppers, and cheese. Scoop into a 6-cup muffin tin and bake for 15-20 minutes.
